Thinking Outside the Bottle

The folks at Plymouth Bay Winery are always coming up with creative ways of incorporating their wines, jellies and sauces into recipes. One happy customer went so far as to bake a cake containing Blackberry Bay wine. Smooth and sweet and surprisingly easy to drink all on its own, Blackberry Bay is the star of “Helen’s Blackberry Wine Cake.”


1 cup chopped pecans

1 box yellow cake mix

1 box blackberry Jell-o

1/2 cup vegetable oil

4 eggs

1 cup Blackberry Bay Wine

Spread pecans in the bottom of a bunt cake pan. Combine cake mix and jello together. Add the oil, eggs and wine and mix well. Pour the batter into the bunt pan and bake at 325 degrees for 50 minutes. Cool before glazing.


1 stick butter

1/2 cup Plymouth Blackberry Bay Wine

1 cup powdered sugar

Heat the butter and wine until the butter melts. Add the powdered sugar and boil until dissolved. Turn cake onto a platter and spoon blackberry glaze over cake until it is absorbed.
