If you happen to see smoke rising up in the air near Solstice Restaurant in Kingston, don’t worry. The restaurant has begun hosting a weekly Texas Takeover Night that features authentic Texas barbecue made on-site in restaurant owner John Cataldi’s custom-made smoker. Cataldi spent two months building a 500-gallon smoker, with technical advice from his good friend, John Lewis, who is a former pit master at Franklin Barbecue and La Barbecue in Austin, Texas. The Solstice barbecue menu includes such favorites as brisket, pulled-pork sliders and smoked Texan sausage—not to mention plenty of hearty sides, like mac ‘n cheese. While Solstice is best known for its elegant cuisine and atmosphere, when the crew fires up the smoker on Thursday nights, the focus will be on no-fuss comfort food.
